冷餐会-法式海绵蛋糕French sponge cake
原料:蛋黄5个、细纱糖20克、蛋白5个、细纱糖60克、120克低筋面粉、80克溶解黄油
(Raw material: egg yolk 5, spinning 20 g sugar, protein 5, spinning 60 g sugar, 120 g f lour, 80 g low reinforcement clarified butter)

做法(Practice):
1、将蛋白打发至湿性发泡,分次加入细纱糖打发。

2、将蛋黄打散,加入细纱糖,用打蛋器打发(蛋黄少,建议用小碗或将碗侧倾打发)

3、把打发的蛋黄倒在蛋白上,翻底搅拌均匀。
